The name “Manta” carries a dual meaning—honoring both the graceful manta ray, a nod to the restaurant’s focus on seafood, and the Spanish word for canvas, reflecting the freedom of artistic expression found in every dish. Chef de cuisine Abisai Sánchez crafts a menu inspired by the Pacific coasts of Mexico, Peru, and Japan, blending cultures and flavors while keeping things relaxed and grounded. Every plate showcases local, sustainable ingredients from Baja, creating a dining experience that feels both elevated and effortlessly authentic.

Journey in Food

Dinner at Manta is a sensory experience that celebrates the flavors of the Pacific with bold creativity and Baja soul. The menu opens with bright, fresh starters like sashimi with ají amarillo and sesame, Peruvian cebiche, and shrimp, scallop, and octopus aguachile—all bursting with citrus and spice. Locally loved Chocolata clams arrive in leche de tigre with ginger oil, while inventive vegetarian plates like beetroot cebiche with habanero or guacachile with grilled vegetables show Manta’s lighter side.

Moving to warm dishes, you’ll find comforting bites such as mushroom ramen with epazote and pasilla mixe, roasted sweet potato with almond mole, and rice with roasted vegetables and corn. For mains, the kitchen’s skill shines through plates like grilled fish with árbol miso, Korean fried chicken with barbecue and pickled radish, or tender ribeye crusted in chile.
